This rice is really simple and really tasty. We love it with some mackerel lightly cooked on the griddle pan, a leafy beetroot salad and some tzatziki. Delicious!
1 small onion
1/2 tsp chilli flakes
300g long grain rice
1 tin of black beans
600ml vegetable stock
1 tsp turmeric
A couple of handfuls of coriander
Dice the onion and fry in a little oil with the chilli flakes. (Our little Nelson Taylors prefer just two pinches of chilli flakes).
Add the turmeric to the stock and then add to the pan with the rice and drained black beans.
Bring to the boil.
Turn down and simmer for 15 minutes.
Turn off the heat and leave with the lid on for 5 minutes.
Squeeze in the lime juice and stir in fresh, chopped coriander.
